
This cake has been a family favorite for as long as I can remember. It’s rich, moist, everything a cake should be and more. To top it off, with a name like “Oatmeal Cake,” it can basically be considered a health food!
Here’s what you’ll need…

Bring the water to a boil, add the oatmeal and soda and stir until combined.
Cover and let sit while you mix the rest of the cake.

Add all ingredients except eggs and mix until combined.
Whisk eggs. Add eggs and oatmeal mixture to the other ingredients.
Mix well.

Pour into a greased cake pan and bake at 350′ for 35-40 mins. or until a toothpick comes out clean.

While the cake is baking, you can begin mixing the frosting in a large saucepan. Mix all ingredients except Vanilla.
Cook over med/high heat until it comes to a simmer. I like to let is simmer for 2-3 mins so the sugar crystalizes just slightly. If you prefer a softer frosting then just cook until everything is melted and well combined.
Let both the cake and frosting cool slightly but not completely. Unlike most cakes, you want to frost this cake while it is still warm.
Cut, serve and enjoy. We like this cake best when served with a scoop of Vanilla or Vanilla Bean Ice Cream.

Oatmeal Cake
Ingredients
Cake
- 1 C. Quick Oats
- 1 1/2 C. Boiling Water
- 1 tsp. Baking Soda
- 1 C. Brown Sugar
- 1 C. White Sugar
- 1/2 C. Butter
- 1/2 C. Oil
- 1 tsp. Cinnamon
- 1 tsp. Baking Powder
- 1 pinch Salt
- 2 C. Flour
- 2 Eggs
Frosting
- 1/2 C. Butter
- 1 C. Brown Sugar
- 1/3 C. Evaporated Milk
- 1 C. Crushed Walnuts
- 2 C. Coconut
- 1/2 t. Vanilla
Instructions
Cake
- Bring water to a boil, then add the oatmeal and baking soda. Cover and let sit. Mix all other ingredients except eggs. Whisk eggs slightly and combine all ingredients, including oatmeal mixture, together. Pour into a greased 9″x13″ cake pan and bake at 350′ for 35-40 mins. Remove from oven and let cool slightly but NOT completely (5-10 mins) before frosting.
Frosting
- Mix all ingredients, except Vanilla, in saucepan. Melt over medium/high heat. Let simmer 2-3 mins. for a more solid frosting. For a soft frosting, just cook until ingredients are melted and well combined. (I like the more solid frosting where the frosting crystalizes just a bit.) Add Vanilla, let cool slightly and frost cake.
