Oatmeal Cake

This cake has been a family favorite for as long as I can remember. It's rich, moist and everything a cake should be and more. With a name like "Oatmeal Cake" it's practically a health food.

Ingredients

Cake

  • 1 C. Quick Oats
  • 1 1/2 C. Boiling Water
  • 1 tsp. Baking Soda
  • 1 C. Brown Sugar
  • 1 C. White Sugar
  • 1/2 C. Butter
  • 1/2 C. Oil
  • 1 tsp. Cinnamon
  • 1 tsp. Baking Powder
  • 1 pinch Salt
  • 2 C. Flour
  • 2 Eggs

Frosting

  • 1/2 C. Butter
  • 1 C. Brown Sugar
  • 1/3 C. Evaporated Milk
  • 1 C. Crushed Walnuts
  • 2 C. Coconut
  • 1/2 t. Vanilla

Instructions

Cake

  • Bring water to a boil, then add the oatmeal and baking soda. Cover and let sit. Mix all other ingredients except eggs. Whisk eggs slightly and combine all ingredients, including oatmeal mixture, together. Pour into a greased 9"x13" cake pan and bake at 350' for 35-40 mins. Remove from oven and let cool slightly but NOT completely (5-10 mins) before frosting.

Frosting

  • Mix all ingredients, except Vanilla, in saucepan.  Melt over medium/high heat.  Let simmer 2-3 mins. for a more solid frosting.  For a soft frosting, just cook until ingredients are melted and well combined. (I like the more solid frosting where the frosting crystalizes just a bit.) Add Vanilla, let cool slightly and frost cake.
